What is chai?
Chai is black tea brewed with warming spices, most often cinnamon, cardamom, ginger, clove and black pepper, then sweetened and finished with milk. It is bold enough to stand up to milk and sugar, which is why it is the base of the chai latte.
How to make chai at home
For one mug, simmer 1 heaped teaspoon (about 3 g) of loose leaf chai in 150 ml of water for 3–4 minutes, add 150 ml of milk, bring it back just to a simmer, sweeten to taste and strain. For a quicker cup, steep it in boiling water for 4–5 minutes and top with steamed milk.
